Straw mushroom beef Steps:
1.
Place beef in a bowl, add 1 tbsp oyster sauce, 1 tbsp sunflower oil, 1 tbsp
light soy sauce, 1 tsp. liquid starch, 1 pinch of sugar, 1 pinch of
glutamate and 1 tbsp of Shaoxing wine. Mix well and marinate for 20 minutes.

Heat the sunflower oil in a skillet until cooked to 40%, then add the beef and fry
until a 70% cooked. Remove.

Bring water to a boil in the pan, then add the pieces of straw mushroom.
Blanch. Remove and set aside.

Heat the sunflower oil in the pan, add the spring onions and garlic. Although

Souffle with Rum Preparation
SOUFFLE
AU CHOCOLAT ET AU RHUM Melt chocolate over hot water. When melted add coffee.
Butter and sugar a souffle mold. Mix cornstarch, sugar and milk, and cook
slowly over medium heat. Add chocolate and rum and remove from stove to cool.
Beat egg whites with the pinch of salt until creamy, then add cream of tartar.
Beat until glossy, and add the tablespoon of sugar, beating until stiff. Add
egg yolks to chocolate mixture, mix well. Fold in the whites, one tablespoon at
a time until all is used. Turn mixture into souffle mold 2/3 full. Bake at 375~
for 45 minutes and Review with a needle. If not quite done, cook 5 minutes more.
Serve immediately with fresh cream or whipping cream.
